Sweet potatoes have long been a favorite on the dinner table of Mississippi families. Sweet potatoes are nutrient dense with Vitamin A, beta carotene, Vitamin C, folic acid, and high in fiber.  
In 2012, Mississippi had 23,000 acres of sweet potatoes harvested and brought in $79 million in production to Mississippi.  Our Beauregard variety is a beauty bringing a brilliant orange to enhance any dinner plate.  
Try this recipe as an appetizer, on the go breakfast or a quick meal with a side salad.

ServSafe certification course offered March 18-19

Get your ServSafe certification during a course on March 18-19.

ServSafe certification is one of the most current and most comprehensive food training programs for food handlers.

The class will be taught at the extension office at 214 N. Critz Street in Wiggins.

Those interested in taking the course must register and have the workbook for the class before February 28.

The class is $135 and is two days, 8 a.m. - 5 p.m. each day.

Tony's Tilapia Tacos

Tony's Tilapia  Tacos

Makes: 8 tacos

Prep time: 25 minutes

Portion: 8-4 oz taco's

Serving Temp: Hot

  • 4 Tilapia 6 oz. filets
  • 2 tablespoons Tony's spices and herb seasoning
  • 3 tablespoons olive oil
  • 8 six inch soft flour tortillas
  • 2 cups shredded pepper jack cheese
  • 2 cups shredded cabbage
  • 1 cup Tony's "Creole" sandwich sauce
  • 1 tomato diced
  • 1 avocado sliced 

Summary:

1.) Lay out the Tilapia filets on a large cutting board, cut each filet in half length wise.
